- 1 onion – chopped
- Tsp olive oil

- 1 cup Picante sauce divided in two

- ½ tsp ground cumin
- 1 cup cottage cheese
- 1 cup cheddar
- 8 flour tortillas
- Preheat oven to 350. Cook and stir onion in oil over medium heat until tender. Add spinach, broccoli, and 1/3 cup Picante sauce. Add in garlic powder and cumin.
- Once they’re cooked through, remove skillet from heat. Stir in cottage cheese and cheddar cheese. Add to the tortilla, spooning the mix in the center and rolling tightly.
- Bake for 20-25 minutes.
- Optional – Sprinkle with extra cheddar, and pop in the oven for an extra 5 minutes for extra melty cheese
2. Maple Roasted Brussel Sprouts Recipe
This is a quick and simple way to dress up some delicious root vegetables. You can even add carrots or squash to your dish and round it out, but otherwise, it’s a great side dish!
- 1 Cup of fresh Brussel sprouts
- ½ cup onions
- Olive oil
- ½ cup maple syrup
- Sea salt and pepper to taste
- Preheat the oven to 450
- Chop up the Brussel sprouts and onions. Drizzle with maple syrup until coated
- Drizzle with oil, and add plenty of salt and pepper
- Roast for 15 minutes. Once they’re done, let it rest for 5-10 minutes to caramelize the syrup.
3. Apple and Brie Quesadillas
Another quick and easy dish made healthy with apple and the delicious, peppery taste of arugula.
Ingredients – Dressing
- 1 tbsp of Dijon mustard
- 2 tsp of apple cider
- Pepper to taste
- 6 ounces of brie cheese with the rind removed, cut into slices
- 1 or 2 apples cored and cut into slices
- 3 cups of arugula
- 3 flour tortillas
- Mix Dijon, cider, and pepper in a bowl to create the dressing
- Heat a large non-stick skillet over medium heat
- Spread dressing over the tortillas
- Arrange apple and cheese on one side of the tortilla.
- Add arugula and fold over Cook 2 minutes on each side
- Cut into wedges and enjoy!
4. Quick and Easy Carbonara
This is a simple carbonara recipe that doesn’t use cream and is full of delicious, satisfying flavors of roasted garlic, eggs, and bacon.
- ½ cup of spaghetti
- 1 tbsp of minced garlic
- 3 slices of thick-cut bacon
- 2 eggs
- Parmesan cheese to taste
- Cook the pasta and fry the bacon to about half your preferred fry. Drop the minced garlic into the pan as the bacon cooks.
- Drain the spaghetti, and finish cooking bacon and garlic together. Drain the oil from the bacon.
- While the spaghetti is still hot, crack two eggs in the pot. The hot pasta will cook the eggs. Stir vigorously and add bacon.

5. Fast and Cheap Beef and Broccoli
The best way to eat healthier and save money is to skip the takeout lines. This homemade beef and broccoli will help you stay in, and still enjoy a delicious takeout favorite.
- 2/3 low sodium soy sauce
- Juice of ½ lime
- 3 tbsp of packed brown sugar
- 2 tbsp of cornstarch
- Salt and pepper
- 1 lb sirloin steak, sliced thin
- 2 tbsp of vegetable oil
- 3 cloves of garlic minced
- 1/3 low-sodium beef broth
- 2 tsp of Sriracha
- 1 head broccoli, cut into florets
- Thinly sliced green onions
- Sesame seeds for garnish
- Whisk 1/3 cup of soy sauce, lime juice, 1 tbsp brown sugar and cornstarch. Coat steak completely and leave to marinate for at least 20 minutes.
- Heat oil in a large skillet on medium-high heat. Add steak and cook about two minutes per side.
- Stir in garlic for about 2 minutes, and add cornstarch slowly until garlic is coated. Then stir in broth, brown sugar, soy sauce, and Sriracha. Simmer. Add broccoli and simmer until tender.
- Garnish with sesame seeds and green onions and enjoy.
