  • 1 ¼ of coconut flour
  • 1 tbsp of baking powder
  • ¼ tsp of salt
  • 1 tsp of cinnamon
  • 1 tsp of sugar
  • 1 large ripe banana
  • ¾ cup of almond milk
  • 1 tsp of vanilla extract
  • 1 tsp of coconut oil

Instructions

  • Mix flour, sugar, baking powder, salt, and cinnamon
  • Mash banana, add coconut oil, almond milk, and vanilla. Mix wet and dry ingredients
  • Heat up a pan with coconut oil. Once it’s hot, you can add your batter. When it starts to bubble on top, you can flip to the other side. It should take about 2 to 3 minutes each side to cook through

  • 2 tsp of Dijon mustard
  • Red pepper flakes to taste

Instructions

  • Slather the vegan margarine outside the bred and warm up your panini press, or sandwich maker
  • Place one slice of bread, buttered side down on the press
  • Add in the veggies
  • Before adding the last slice, add a healthy dose of Dijon or honey mustard to the top bread
  • Add in red pepper flakes for extra heat if you choose
  • Close the sandwich and pop it in the press
  • Alternatively, heat a frying pan, and fry for two or three minutes on either side. The oil from the margarine will cook, so you don’t need to add extra

  • 1 sun-dried tomato
  • Salt and pepper
  • Pine nuts

Instructions

  • Salt and strain your zucchini noodles for at least 20 minutes before you start
  • Mix the avocado, basil, olive oil, lemon juice, and garlic in a food processor. Blend well until smooth
  • Rinse your zoodles, and fold in the avocado pesto. Add the sundried tomatoes and fold that in too
  • Season with salt pepper and lemon juice to taste, and sprinkle with pine nuts for garnish

  • Olive oil

Instructions

  • Heat olive oil in a large frying pan
  • Add in the onion and cook over a medium-high heat
  • Add in the garlic, turmeric powder, chili powder. For some extra heat, add red pepper flakes or cumin
  • Crumble the tofu and stir so it’s covered in the curry mixture. Cover the tofu and let it warm
  • Add in the spinach and stir until it’s wilted
  • Season with salt, pepper and lemon juice

  • Cook the brown rice syrup and maple syrup together in a large pot over medium heat. Bring to a rolling boil and cook for 1 minute. Stir throughout
  • Turn off the heat and add almond butter and vanilla
  • Mix in the rice cereal until it clumps. Scoop into the pan, and freeze
